Cooking with Diane: 'Old-Fashioned Hermit Bars'

My husband loves anything with raisins, so these cookie bars were right up his alley. They didn’t last very long.

“Old-Fashioned Hermit Bars”

1/2 cup raisins (soak in boiling water for 5 minutes)

1 cup flour

1/3 cup brown sugar

1/2 teaspoon baking powder

1/2 teaspoon ginger

1 teaspoon cinnamon

1/2 teaspoon salt

1/4 cup molasses

3 tablespoon butter (melted)

1 egg

1 teaspoon vanilla

1/2 cup chopped walnuts

In one bowl, combine dry ingredients. In another bowl, whisk together molasses, butter, egg and vanilla. Stir into dry ingredients, then fold in drained raisins, and walnuts. Spread into a small 12x2 cookie sheet lined with parchment paper.

Bake 10-15 minutes at 375 degrees.

Let cool then cut diagonally into 1½-inch bars.
