Cooking with Diane: Apple Date Bread

Apple Date Bread


3 cups flour

1 cup sugar

1 tablespoon baking powder

1 teaspoon salt

1 cup flaked coconut

1 cup milk

1/2 cup apple sauce

1 egg (lightly beaten)

1 cup apples (pealed and diced)

1 cup dates (diced)

Mix together dry ingredients, then stir in coconut. Combine milk, egg, and applesauce in a small bowl, and add to dry ingredients, blending well.

Stir in apples and dates. Pour into a greased 5x3 loaf pan. Bake at 350 degrees for 60 to 70 minutes.
