Cooking with Diane: Orange muffins

What is better than a hot cup of coffee and a delicious warm muffin on cold winter mornings. These Orange Muffins are just the thing to hit the spot. Enjoy!

“Orange Muffins”

2 sticks of butter

1 cup sugar

2 eggs

1 tablespoon vanilla

1 cup orange juice

1/2 cup sour cream

2 cups flour

2 tablespoons cornstarch

2 teaspoons baking powder

1/2 teaspoon salt

Zest from two oranges

Cream butter, sugar, eggs and vanilla until smooth. Add orange juice and sour cream, mixing well. Add all dry ingredients and orange zest, mix until well blended. Put 1/4 cup batter into paper muffin cups. Bake for 20 minutes at 350 degrees.


1 1/4 cups powdered sugar

2 ounces cream cheese (soft)

3 tablespoons orange juice

1/2 teaspoon vanilla

Zest of one orange

Pinch of salt

Put all ingredients into a sauce pan on medium heat. Stir until cream cheese is melted and all ingredients are blended. Pour over warm muffins.
