Cooking with Diane: Marinated Garden Fresh Tomatoes
This recipe is perfect for those tomato lovers out there who happen to have an abundance of tomatoes in their garden like I do. I picked tomatoes in various stages of ripening from green, orange and red, they were delicious!
Marinated Garden Fresh Tomatoes
3-5 medium fresh tomatoes (sliced)
1/4 cup red wine vinigar
¼ cup fresh lime juice
1 teaspoon salt
1/4 teaspoon pepper
1 garlic clove (minced)
2 tablespoons onion (chopped fine)
1 tablespoon fresh cilantro (chopped)
Arrange sliced tomatoes in a shallow dish. Put all remaining ingredients in a jar and shake well. Pour over the tomatoes, cover and chill for several hours.
