Cooking With Diane: Black-eye Pea & Pasta Chowder
This yummy chowder is loaded with pasta, peas, and veggies. Good anytime!
Black-eye Pea & Pasta Chowder
1/2 cup onion (chopped)
1 tablespoon olive oil
3 cloves garlic (minced)
2 tomatoes (chopped)
1/2 cup celery (chopped)
2 cans chicken broth
2 cups water
2 cans black-eyed peas (drained)
1/2 teaspoon oregano & basil
1 cup uncooked pasta (your choice)
In a large saucepan. saute onion in oil, add garlic and tomatoes, simmer 4-5 minutes. Add broth,water and seasonings. bring to a boil, then add black-eyed peas and pasta and bring to a boil again. Reduce heat and simmer until pasta is tender.
