Cooking with Diane: Tuscan Roasted Asparagus
Asparagus are one of my favorite vegetables.This combination of veggies with them make this a very tasty dish for your dinner table.
“Tuscan Roasted Asparagus”
1 bunch of asparagus (cleaned and trimmed)
4 tablespoons butter
2 tablespoons onion (finely chopped)
2 tablespoons celery (finely chopped)
2 medium tomatoes (sliced)
1 teaspoon fresh basil leaves (chopped)
1 teaspoon fresh thyme leaves (minced)
1/2 teaspoon pepper
1 teaspoon salt
3 tablespoons shredded Parmesan cheese
Melt the butter, and pour into a 8x8 baking dish. Place asparagus in the bottom of the dish with melted butter. Sprinkle with onions and celery. Arrange sliced tomatoes on top. Sprinkle with salt, pepper, basil, thyme and cheese. Roast at 350 degrees for 30 minutes or until asparagus are fork tender.
