Cooking with Diane: 'Garlic Butter Baked Halibut'
My husband and I are not big fish eaters, but if you like a real mild tasting fish, this recipe is for you. Very delicious! Try it!
“Garlic Butter Baked Halibut”
1 pound Wild Pacific Halibut (Costco)
1/3 cup butter
2 tablespoons olive oil
3 cloves garlic (minced)
3 tablespoons lemon juice
1 teaspoon lemon zest
5-6 slices of sweet onion
Sea salt & pepper to taste
Saute garlic in the butter, then stir in lemon juice and zest. Remove from heat. In a baking dish layer onions. Salt and pepper fish on both sides and place fish pieces on top of onion. Pour garlic lemon butter over fish. Put a slice of lemon on top of each piece. Bake at 400 degrees approximately 20-30 minutes (until fish is opaque, which means it is done.
When serving spoon some lemon butter over portions.
