Cooking with Diane: Caramel Apple Muffins a great anytime snack

Remember how we loved eating caramel apples as children? You will love these sweet Caramel Apple Muffins. Great for breakfast or a snack anytime of day.

“Caramel Apple Muffins”

2 cups flour

1/2 cup sugar

2 teaspoons baking powder

2 teaspoons cinnamon

1/2 teaspoon salt

1 egg

1 cup milk

1/4 cup butter (melted)

2 teaspoons vanilla

1 cup chopped apple (peeled)

12 caramels (chopped)

Topping:

1/2 cup brown sugar

1/4 cup quick-cooking oats

3 tablespoon butter (melted)

1 teaspoon cinnamon

In a mixing bowl combine flour, sugar, baking powder, cinnamon and salt.

In a separate bowl whisk egg, milk, butter, vanilla. Stir into dry ingredients, then fold in apple and caramels.

Put paper muffin cups into muffin pan, fill half full. Combine topping ingredients and sprinkle over batter.

Bake for 20-25 minutes at 350 degrees.
