Cooking With Diane: Stuffing Crust Turkey Pie

A great way to use Thanksgiving leftovers is this turkey pie recipe. Served with some cranberry sauce, it is really delicious!

“Stuffing Crust Turkey Pie”

3 cups cooked cornbread stuffing

1/2 cup broth

2 tablespoons sour cream

1 cup turkey gravy

2 cups cooked turkey (cubed)

1 cup broccoli (pre-cooked)

1/2 cup Mozzarella cheese

2 cups mashed potatoes

1/4 cup half & half

3 tablespoons butter (melted)

1 cup French-fried onions

salt & pepper to taste

In a bowl combine stuffing and enough broth to make it moist, press into the bottom of a buttered pie plate. In a separate bowl beat gravy and sour cream until smooth, then stir in turkey, broccoli, cheese, salt and pepper, and spoon over crust. Combine potatoes and cream and spread over turkey mixture. Drizzle with butter and sprinkle French-fried onions over the top. Bake 20-25 minutes until heated through.
