Cooking with Diane: Carrot Cake Cookies

These cookies are like bite-size pieces of yummy carrot cake. They were a big hit in our family.

“Carrot Cake Cookies”

1/2 cup butter (semi-soft)

1/2 cup brown sugar

1/2 cup sugar

1 egg

1 teaspoon vanilla

1 cup + 3 tablespoons flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup quick oats

1/2 cup coconut

2/3 cup grated carrots

1/3 cup walnuts

Beat butter and sugars until creamy, then add egg and vanilla. In a separate bowl combine flour, baking soda, baking powder, cinnamon, and salt. Mix into butter mixture, add oats, coconut, carrots and nuts until just combined. Put teaspoon full of dough on greased cookie sheet.

Bake at 350 9-11 minutes. Cookies should be slightly soft. Cool before frosting.

“Cream Cheese Frosting”

3 ounces cream cheese

1/4 cup soft butter

1 teaspoon vanilla

1/2 -1 cup powdered sugar (per your taste)

Cream butter and cream cheese, add vanilla. Stir in powdered sugar. Mix until smooth.
