Cooking With Diane: Cauliflower-Bacon Salad
1 small head of cauliflower
(break into florets)
1/2 pound of bacon(cooked & crumbled)
1 cup cheddar cheese (cubed)
1 cup chopped celery
1 small onion (chopped)
Put all above ingredients into a large bowl.
“Spicy Honey Mustard Dressing”
4 tablespoons honey
3 teaspoons mustard
3 tablespoons lime juice
2 teaspoons chopped fresh thyme
1 tablespoon minced pickled jalapeno
1/2 cup avocado or olive oil
Mix all the dressing ingredients together until well blended. Pour over mixed veggies, toss to cover. Chill for at least 3 hours before serving.
