My garden is overflowing with green chilies and tomatoes. So in order to use some of these veggies I made this delicious Fajita dinner, which my husband really raved about. Hope you will try it!
“Green Chili & Tomato/Chicken Fajitas”
1 pound chicken breast tenders(cut in 1/4 inch slices)
4 fresh green chilies (seeded and cut into slices)
4-5 medium fresh tomatoes(roughly chopped)
1 medium onion (cut into slices)
3 cloves garlic (diced)
2 tablespoon fresh cilantro(chopped)
1/4 cup olive oil
2 teaspoons chili powder
1 teaspoon cumin
1 teaspoon salt & pepper
Put chicken strips in a bowl mix in chili powder, cumin,salt & pepper until chicken is covered in seasonings. In a skillet pour half of the olive oil, add seasoned chicken and tomatoes, stir fry until chicken is done. Remove from pan. Add the rest of the olive oil to pan add chilies, onions, and garlic, stir fry until tender. Add chicken mixture into the chilies and onion and mix together.
Serve with warm flour tortillas. (optional) top with salsa & sour cream.
