Cooking with Diane: Bacon Hash-brown casserole

This hash brown bacon recipe is delicious as a side dish with steak, chops or chicken. It is quick and easy to prepare.

“Bacon Hash-brown Casserole”

3 cups hash browns

3 slices bacon

3 tablespoons butter

1 can cream of celery soup

1/2 cup broccoli florets

1 cup chopped yellow onion

1/3 cup sour cream

1/2 cup cheddar cheese

1/3 Panko crumbs

3 green onions (chopped)

salt and pepper to taste

Cook bacon until crisp; remove from pan and cook yellow onion in drippings till soft. In a bowl, combine potatoes, soup, sour cream, butter and cheese.

Add salt and pepper. Spoon into an 8-inch by 8-inch baking dish. Top with green onions and Panko crumbs.

Bake at 350 degrees for 40 minutes.
