Cooking With Diane: Cranberry Coffee Cake

This sweet and tangy coffee cake will be great for Christmas morning brunch, with a nice cup of hot coffee.

“Cranberry Coffee Cake”

3/4 cup butter

2 cups flour

2 cups cranberry sauce

3 eggs

1 1/2 teaspoons baking powder

1 1/2 teaspoons baking soda

1/2 teaspoon salt

1 cup sugar

1 1/2 cups buttermilk

2 teaspoons orange zest

1/2 cup walnuts (optional)

With your mixer beat butter and sugar until creamy, beat in eggs, then buttermilk and zest.

Mix flour, baking soda, baking powder and salt together then slowly add to wet mixture. Spread half of the batter into a greased 9x13 baking dish, dollop 1 cup cranberry sauce on top and swirl into batter. Top with remaining cranberry sauce and spread. Bake at 350 degrees for 40 to 45 minutes. Cool.

“Glaze”

1/2 cup powdered sugar

2 tablespoons melted butter

2 tablespoons orange juice

Drizzle over top of coffee cake.
