Cooking With Diane: Green Chili Shredded Beef

My husband and I are both meat and potato people, so this shredded beef dish i right up our alley. Enjoy!

“Green Chili Shredded Beef”

1 boneless beef roast (2-3 pounds)

2 medium onions (chopped)

1/4 cup brown sugar(divided)

1 tablespoon paprika

1 teaspoon salt

1 teaspoon chili powder

1/2 teaspoon cayenne pepper

1 teaspoon garlic powder

1/2 teaspoon pepper

3 tablespoons olive or avocado oil

1 28 ounce can green enchilada sauce

(Mashed potatoes optional)

Place onions and 2 tablespoons brown sugar in a 5-6 quart slow cooker.

In a bowl combine the remaining brown sugar, and the next 6 ingredients, mix well then rub on the beef roast. Place meet in a hot skillet and brown on both sides before placing into the slow cooker. Pour the enchilada sauce over the meet in the slow cooker and cook on low 7-9 hours until meet is tender, then shred meat and return to slow cooker mixing into the sauce. Serve over garlic mashed potatoes.
