Cooking with Diane: Brown Butter Peach Cupcakes

This tasty cupcake recipe is very moist because of the flavorful peaches. The butter cream frosting really makes them delicious.

“Brown Butter Peach Cupcakes”

3/4 cup butter

1 cup brown sugar

1/2 cup white sugar

1/2 teaspoon vanilla

2 eggs

2 cups flour

1/2 teaspoon salt

2 teaspoon baking powder

1 teaspoon cinnamon

2 cups diced peaches

1/2 cup peach puree

“Peach Puree”

Heat 3 cups peaches fresh or frozen

1 tablespoon lemon juice

1 tablespoon sugar in a saucepan. Bring to a boil, simmer 5 minutes. Let cool, put into blender until smooth.

To start cupcakes, brown butter in saucepan, then cool. Whisk brown butter, sugars, puree, and vanilla until blended. Mix dry ingredients and gently stir into peach mixture. Fill cupcake tins. Bake 20 minutes at 325 degrees.


1/2 cup soft butter

4 ounces cream cheese(soft)

1/4 cup peach puree

3-4 cups powdered sugar

MIx butter and cream cheese until smooth. Add puree mix well. Add powdered sugar until it’s at spreading consistency
