Cooking with Diane: Tomato Fritters
Here is another good recipe to use those home grown tomatoes. They are also quick and easy to make, and taste wonderful!
1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1/ teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon pepper
2 medium tomatoes ( finely chopped )
1/2 cup onion (chopped)
1/2 cup shredded Parmesan cheese
1 Jalapeno pepper (seeded & minced)
1 clove garlic (minced)
4-6 tablespoon water
Oil for deep frying
In a large bowl whisk flour, baking powder, salt, basil, oregano and pepper. Gently stir in tomatoes,onion,jalapeno, cheese, and garlic, and water until moistened.
in an electric skilletheat oil to 375 degrees. drop batter by rounded tabespoonfuls, a few at at time. Fry until golden brown about 1-2 minutes. Drain on paper towels.
