Cooking with Diane: Mini Applesauce Muffins
Wait until you taste these applesauce muffins. My granddaughter and I made them this past weekend and they are sweet and delicious! A good recipe to get kids involved in baking.
Mini Applesauce Muffins
2 cups Bisquick
¾ cup white sugar (divide)
½ cup brown sugar
¾ cup applesauce
3 teaspoons cinnamon (divided)
1 teaspoon vanilla
¼ cup milk
2 tablespoons oil
1 stick melted butter
Mix Bisquick, ¼ cup white sugar, and 1 teaspoon cinnamon.
Stir in applesauce, milk, vanilla, egg, and oil. Mix well. Fill mini-muffin cups ¾ full. Bake at 400 degrees for 10 minutes.
In a bowl, mix remaining white sugar, brown sugar and remaining cinnamon together. In a separate bowl melt 1 stick of butter.
When mini-muffins are baked, dip each one in melted butter, then roll in the sugar cinnamon mixture and put on a platter.
