This is one of the tastiest quick suppers I have eaten in a long time. It takes about 20 minutes to put this meal on the table, which is great for working moms. It has become one of our favorites. Hope you like it as much as we do.

Bacon and Pea Ramen Risotto

½ cup diced bacon

1 tablespoon olive oil

1 cup chopped onion

½ teaspoon salt

¼ teaspoon pepper

2 3-ounce packages ramen noodle soup, broken into pieces (discard flavor packet)

1 10-ounce package frozen peas

3 cups chicken broth

1 tablespoon butter

1 cup shredded parmesan cheese

In a medium skillet cook bacon in oil until just beginning to crisp. Add onion stirring until onion is soft. Add noodles stirring about one minute, then add peas, broth, salt and pepper stirring until noodles are tender. Remove skillet from heat and stir in butter and cheese.
