Cooking with Diane: Slow Cooker Corn Ham & Cheese Chowder
When those autumn winds start blowing and our days get cooler it’s time for stews and soups at our house. Serve this corn chowder with some yummy homemade bread for the perfect meal.
Slow Cooker Corn Ham & Cheese Chowder
3 medium peeled potatoes (cubed)
2 packages frozen corn
2 cups deli ham (cubed)
1 medium onion (chopped)
3 cloves garlic (minced)
4 stalks of celery (chopped)
3 cups vegetable broth
1 cup milk
1 cup buttermilk
½ teaspoon pepper & salt
1 teaspoon liquid smoke
2 cups sharp cheddar cheese
1 cup sour cream
Place potatoes, corn, ham, onion, celery, pepper, and broth into the slow cooker, and cook on low for approximately 8 hours or until potatoes are tender.
In a bowl, mix cornstarch with the milks and liquid smoke, stir until smooth, then add to soup and cook until it starts to thicken, then stir in cheese and sour cream, blend until cheese is melted.
