Since autumn is soup season at our house, these cheesy jalapeno muffins go great with any soup your family craves. Enjoy!

Jalapeno –Cheesy Corn Muffins

¾ cup flour

¼ cup fine yellow cornmeal

½ teaspoon sea salt

1 tablespoon sugar

½ teaspoon baking powder

¼ teaspoon baking soda

¼ cup sour cream

3 tablespoons olive oil

2 large eggs

2 tablespoons chopped pickled jalapenos

1 cup shredded cheddar cheese

In a large bowl, mix together cornmeal, flour, sugar, baking powder, baking soda, salt. In a separate bowl combine sour cream, oil, and eggs mixing well. Add to dry mixture, then fold in jalapenos and cheese.

Pour batter into greased muffin cups. Bake at 400 degrees for 15 minutes.
