Cooking with Diane: Mixed Berry Cobbler

One of the original American foods was the cobbler. American colonists were unable to duplicate suet puddings from England because they lacked the proper ingredients and equipment, or so the story goes.

So they improvised and the cobbler was born.

They were so popular that they were often served as a main dish. Today, they are mostly considered desserts.

This recipe is sure to be a favorite with your family, mixing three different types of berries for a burst of flavors. Give it a try.

Mixed Berry Cobbler

½ cup sugar

3 tablespoons corn starch

1 teaspoon vanilla

1 cup water

1 cup raspberries

1 cup blue berries

1 cup blackberries

Topping

1 cup Bisquick

1 cup milk

½ teaspoon cinnamon

½ cup butter ( melted)

Pour melted butter into the bottom of an 8x8 baking pan. In a bowl mix together Bisquick, milk and cinnamon. Pour into melted butter and stir until mixture and butter and mixed together.

In a saucepan on medium heat, mix together sugar, cornstarch vanilla, and water, and stir until blended and mixture starts to thicken.

Add berries and blend well. Pour berry mixture over the Bisquick topping . Bake in a 350 degree oven 50-60 minutes. Serve with a scoop of vanilla ice cream or whipped cream.
