Quick and delicious desserts

Here are a couple of delicious and quick desserts that are great for everyone, but especially for those of you who are too busy to spend a lot of time preparing food. The brownies are very healthy, as they have no sugar, no dairy and are gluten free. Of course the creamy cheesecake bites aren't fat free but they are yummy.

Flourless Brownies

3 medium bananas

½ cup Almond Butter

¼ cup coco powder

2 tablespoons raw honey

Put all ingredients in blender and pulse until smooth. Pour into a small greased loaf pan. Bake 20-25 minutes at 350 degrees. Cool before slicing.

Coconut-Lemon Cheesecake Bites

2 8 ounce packages cream cheese (cold)

2 ½ cups shredded coconut

6 tablespoons honey

Juice and zest of 1 Lemon

1 teaspoon lemon extract

4 whole graham crackers

¼ cup sugar

Place cheese, lemon juice& zest, honey, and extract in a blender or food processor. Blend until smooth, then add 1 ½ cups coconut, blend again. Chill for an hour, then shape into 1-2 inch balls.

Mix together 4 whole crushed graham crackers, ¼ cup sugar and remaining coconut in a small bowl. Roll each ball in the graham cracker mix, place on a plate and keep in refrigerator until serving.
