Country ham and potatoes.

Country Ham and potatoes is a tasty, hearty meal, that is similar to scalloped potatoes, but the soup and gravy mix give it a whole new taste. My husband isn’t fond of scalloped potatoes, but he loved this dish.

Country Ham & Potatoes

1 pound of baby potatoes (red or white) sliced thin

2 cups chopped ham

2 stalks celery (chopped)

1 small onion (chopped)

1 can cream of celery or mushroom soup (your choice)

1 package Peppered Country gravy mix

2 cups water

3 tablespoons butter

1 ½ cups cheddar cheese

Salt & pepper to taste

Sauté onion and celery in butter about 5 minutes. Blend together the soup, gravy mix and water. In a buttered baking dish put your potatoes, ham, and sautéed veggies, salt and pepper. Pour soup and gravy mixture over the potatoes and ham. Cover and bake at 375 degrees for 40 minutes. Then uncover dish spread shredded cheese over potatoes, and bake uncovered for 25 more minutes.
