Cooking with Diane: Cream Cheese Strawberry Bread

This Strawberry Bread is almost cake like. The strawberries make it nice and moist. My husband loved it, I only had one piece and he ate the rest.

Cream Cheese Strawberry Bread

½ cup butter (soft)

1 cup sugar

4 ounces cream cheese

2 eggs

1 teaspoon strawberry extract

2 cups flour

2 teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

½ cup half & half

1 ½ cups strawberries -"fresh or frozen (chopped)

In a large bowl cream butter, sugar, cream cheese with your mixer on medium speed, then add strawberry extract, and eggs one at a time and mix well.

In a small bowl mix together flour, baking soda, baking powder, and salt. Add to butter mixture, and slowly add half and half just until blended.

Fold in strawberries that have been drained and patted dry. (if using frozen strawberries, save the juice that has been drained to use for topping).

Pour mixture into a greased 9x5 loaf pan, Bake at 350 degrees for 50-60 minutes.


2/3 cup pecans (ground)

4 tablespoons butter

¼ cup sugar

1/3 cup strawberry juice (from draining frozen strawberries) or use milk

In a saucepan melt butter add milk or juice and sugar, stir on med heat until it starts to thicken, add ground pecans. Pour over warm strawberry bread.
