These muffins are super moist, and they were a big hit at our house. They are good for breakfast or just a nice snack any time if day.

Blueberry Sour Cream Muffins

1 ½ sticks butter (soft)

1 cup brown sugar

2 large eggs

1 cup sour cream

¼ cup buttermilk

1 ½ teaspoons lemon extract

2 ½ cups flour

2 teaspoons baking powder

½ teaspoon salt

2 half pints blueberries

Cream butter and sugar until fluffy, add eggs one at a time, add lemon extract, sour cream, milk, beat until mixed. Sift dry ingredients and add to mixture, stir until blended. Fold in blue berries.

Spoon mixture into paper-lined muffin cups. Bake at 350 degrees for 25-30 minutes.
