Mac-cauliflower with smoked Gouda

Ask most children what their favorite meal is, and macaroni and cheese will be mentioned quite often.

This recipe is very delicious with the creamy, smoky goodness of the Gouda cheese, and will get them to eat a vegetable (cauliflower) and they probably won't even know it's there. My family loved it, hopefully yours will too.

Mac/cauliflower

with smoked Gouda

1 box (8 ounce) pasta (your choice)

2 cups cauliflower florets

1 tablespoon olive oil

2 tablespoons butter

½ cup onion (diced)

3 tablespoons flour

½ teaspoon salt & pepper

¼ teaspoon cayenne pepper

1 teaspoon smoked paprika

1 tablespoon Dijon mustard

1 1/2 cups milk

1 ½ cups smoked Gouda cheese (shredded)

Cook pasta as directed about 5 minutes, then add the cauliflower florets in with the pasta and cook for an additional 3-to-4 minutes. Drain, and set aside.

In a large skillet put olive oil and butter, when butter is melted add onion and sauté till soft, then whisk in flour, cayenne, and paprika, then slowly stir in milk and broth until mixture is smooth and starts to thicken, add cheese mustard, salt and pepper, stir until cheese is melted.

Pour over the pasta and cauliflower, mix until well coated. Serve.
