Corn, potato and bacon soup

I love making soup in the fall. This is a new recipe I tried because it sounded very good, and it was. Bake some bread and it's perfect for a cool autumn evening.

Corn, potato,and bacon soup

1 medium yellow onion (diced)

2 stalks celery (chopped)

2 carrots (chopped)

2 large potatoes (chopped)

1 package frozen corn

3 cans chicken broth

1 cup water

1 pint of half & half

5 slices bacon (diced)

2 tablespoons olive oil

1 tablespoon butter

1 sprig of fresh thyme or 1 teaspoon dried thyme

Salt & pepper to taste

In a skillet put olive oil and butter and bacon, cook until bacon is crisp.

Add onion and celery sauté. In a large pot put broth and water, potatoes, and carrots. After potatoes and carrots have started to soften, add the corn, celery, bacon and onion. Let simmer until veggies are soft, then turn heat down and add half and half, salt and pepper, let simmer for a few minutes, then serve.
