Cooking with Diane: New Year Black-eyed Pea Soup
Legend has it that eating pork or black-eyed peas on New Year's Day is said to bring people wealth in the coming year. This delicious soup has both pork and black-eye peas, possibly doubling your chances, so hear is wishing you wealth and health in 2016.

Black-eyed Pea Soup
½ pound breakfast sausage (browned)
1 cup chopped ham
2 cans Black-eye peas
1 can Rotel tomatoes with green chilies
½ medium onion (chopped)
1 5 ounce package of yellow saffron long grain rice
2 cans chicken broth
2 cups water
Salt & pepper to taste.
Brown sausage in a skillet, then add to soup pot with all other ingredients. Let simmer for approximately 30 minutes. Serve with rolls or corn bread.
