Cooking with Diane: Scones with gravy

I invited my grandson and his fiancé over for brunch and served these scones with the bacon gravy.

My grandson's words were, "Grams, these are divine, I want the recipe."

"Ham and Cheese Scones & Bacon Gravy"

3 cups flour (level off each cup )

2½ teaspoons baking powder

2 teaspoons sugar

1 teaspoon baking soda

1 teaspoon salt

¾ cup cold butter, cut into cubes

1 cup sharp cheddar cheese

1 cup chopped ham

3 green onions (diced)

1 tablespoon diced garlic/onion chives (optional)

1 cup half and half

Whisk together flour, baking soda, baking powder, sugar, and salt. Using a pastry cutter or fork cut in cold butter until mixture resembles course meal, stir in cheese, ham and green onions. Slowly add half and half stirring until dough begins to form.

Transfer dough to counter and knead about 15 seconds until it comes together. Make into loose balls (about 2 inches across) place on greased cookie sheet, bake 10-15 minutes at 400 degrees.

"Bacon Gravy"

Fry 8-10 slices of bacon until crisp, crumble and set aside. You may need to add more bacon drippings to make enough gravy. With the heat off stir in enough flour until grease is absorbed. Then turn heat on low, and slowly start pouring in milk stirring constantly to keep gravy smooth and until gravy is the consistency you want. Add crumbled bacon to gravy, add salt and pepper to taste, stir well, and serve over scones.
